Roasted Chicken Thighs and Potatoes

Now at the outset, I will tell you I’m not a professional food blogger, food photographer, or recipe developer. I’m just a busy mom trying to get dinner on the table every night. I made this easy Roasted Chicken Thighs and Potatoes meal last week and wanted to share this simple meal with you!

If you have fresh herbs in your garden, they make a lovely and tasty addition to this sheet pan meal. Even if you don’t have an herb garden, you can still make this simple dinner! Here’s how I made it:


Ingredients


Bone-in chicken thighs

Potatoes—any kind works. I had a few yellow potatoes and one sweet potato.

Onions

Olive oil

Salt/pepper and any others seasonings/herbs that delight your palate. Some of my favorites are garlic powder, onion powder, and parsley.

 

Directions


1.       Peel and cube potatoes into large chunks. Slice onions into thick slices.

2.       Arrange chicken and veggies on a parchment-lined cookie sheet.

3.       Drizzle everything with olive oil. Season with any herbs/spices that you like. I sprinkled some Himalayan Sea salt and ground some black pepper and then arranged fresh herbs from our garden on top (I have sage and thyme on hand from my garden, so that’s what I used).

4.       Bake for 400 degrees Fahrenheit until chicken reads 180 degrees—this took about 50 minutes.

5.       If your veggies are not quite done (which happened to me), no problem! Simply plate your chicken (I actually use my microwave as a place to store hot food—keeps it warm and away from any pesky flies or bugs). Then put your veggies back in the oven until they are crispy on the outside and soft on the inside. This took about 15 extra minutes for me.

This simple meal idea is a great way to get protein and veggies to your table without too much fuss. It’s customizable to any palate or preference.
