How to Make Delicious Curry Sauce

Right after my baby was born back in March, some dear friends wanted to bring us dinner. They asked what restaurant they could pick up food from on their way to our house.
It took me a bit to figure out where I could comfortably eat a meal from. For the last few months of my pregnancy, I was on a low-sodium diet to keep my blood pressure down, and I wanted to do my best to maintain a healthy blood pressure even after childbirth.

I chose a local chain called Tropical Grille that focuses on fresh, healthy food with a Latin-inspired twist. The ingredients are simple and wholesome, and the sauces elevated the basic rice, beans, and proteins to an incredible level.
One of our favorite sauces was a curry sauce. Now, I will admit, I as a skeptic at first. I am not a fan of spicy, and I’m not a real fan of traditional Indian food with all their exotic curry flavors. I thought the curry sauce from Tropical Grille would be an odd addition to rice and beans, but as it turns out, it was a game changer.
My husband then asked me if I could try to find a recipe that mimicked Tropical Grille’s sauce. I found a few recipes, tweaked the best one, and then came up with my own rendition.
Now you might be thinking, “I don’t like curry.” Or, “that really sounds weird.”
The curry in this sauce is not spicy. If I could describe it in one word it would be “warm”--not spicy warm, but warm like cinnamon.

It may sound like a strange sauce, but I’m telling you—it is delicious on so many types of food. It’s delicious on rice and beans, any type of Mexican or Brazilian style food, and even as a salad dressing.
I’m going to share two recipes with you--one small and one family-size. They both will taste the same, but I’m calling one the “Taste-tester” and the other “I love this stuff!” Try the “Taste-tester” first to see if you like it, but I have a hunch you will be mixing up another batch of “I love this stuff!”
This recipe is authentic--it's a true family favorite. It is not something I made up to slap on my blog and hope that my readers like it (ever tried one of those?). We genuinely love this recipe, and I make it on repeat and usually keep a jar of it in the fridge. I truly hope you enjoy it, too! Friends and family who have tasted this keep coming back for more!
Recipes for Delicious Curry Sauce
The Taste-Tester (small batch)
Ingredients
¼ cup of mayonnaise. We love Duke’s. Call us Southern, but to us, this is the real stuff.
2 teaspoons of yellow mustard
1 teaspoon of curry powder. I used McCormick Organic Curry powder (not the spicy version)
1 tablespoon of water
1 tablespoon of honey, or more to taste.
Directions
Whisk all of the ingredients together. If you have time, let it sit in the fridge for a bit so that the flavors can really develop. Even if you don’t have time to do that, it is still great. Store in the fridge.
I Love This Stuff! (family-size batch)
Ingredients
1 cup of mayo
2 tablespoons plus 2 teaspoons of yellow mustard
1 tablespoon plus 1 teaspoon of curry powder
¼ cup of water
¼ cup of honey
Directions
Whisk all ingredients together. Store in fridge for an hour before serving. Enjoy!
