Aunt Ashley's Soup

Today’s post will be short and sweet. I’m sharing a simple soup that I came up with, and my children, nieces, and nephews all seem to enjoy it! This soup can easily be adapted to meet your preferences and needs, including swapping out regular pasta for gluten free pasta which is what I do. We love the Jovial brand of gluten free pasta!


Ingredients


1 lb ground beef

1/2 diced onion

3-4 celery ribs

4-5 carrots*

1 cup frozen corn

1 cup frozen peas

8 cups liquid—could be water or stock

2 Tablespoons Beef Better than Bouillon

1 small jar of pizza sauce or a regular size of pasta sauce (depending on how saucy you want it)

1 teaspoon basil

1 teaspoon oregano

1 teaspoon parsley

3/4 teaspoon thyme

Onion powder and garlic powder to taste

1 to 1.5 teaspoon salt

Ground pepper

1 to 1.5 cups dry pasta

Directions


Cook ground beef and onion together. Drain. Add all ingredients except pasta and simmer until veggies are soft (about an hour). Add pasta and cook until al dente.


*You can substitute a bag of frozen mixed veggies in place of the corn, peas, and carrots.


Enjoy with your favorite soup sides like crackers and cheese, muffin, bread, salad, etc.

I love easy recipes! especially ones the kids will eat!
