Easy Breakfast Casserole
October 28, 2026

I almost laugh that I am sharing this simple breakfast meal idea with you and calling it a recipe. But I remember in my early days of marriage being so desperate for meal and cooking ideas, and I wish that I had come across this concept much sooner.
I first saw this idea on Farmhouse on Boone channel and have since adapted and tweaked it for my family’s liking.

On the weekends, I try to cook/bake several breakfast foods that will last us through the weekend, and if we are lucky, a day or two into the week. This egg casserole is really more of a batch-cooking concept than an actual recipe, but this casserole will save you time and help keep your sanity on busy mornings when frying eggs and making homemade toast just isn’t on the to-do list.
What is so great about this easy breakfast casserole:
The ingredients are simple. If I have a pound of sausage on hand, and our chickens have given me at least 12 eggs, I am pretty much good to go!

It’s gluten free. I don’t always eat gluten free, but I really try to limit my gluten intake. (You could certainly add torn bread pieces for a very filling and yummy casserole!)
It’s kid-friendly. The kids will actually eat this. Enough said. No weird, ultra “healthy” ingredients.
It’s adaptable. Sometimes we eat it just as a casserole. I like to make a sandwich out of it with homemade pancakes. We have eaten it with English muffins and toast. I have even crumbled it in the hot skillet, stuffed it in lavash bread with some cheese, and fried it as a healthy “breakfast taco” concept.
It’s customizable. You can add any veggies, herbs, or seasonings that you like or just keep it plain and simple.

This is real-food cooking from a real kitchen. This isn’t some weird, jazzed-up recipe that no one has time to make. This is a meal that we make about every two weeks!
Here’s how to make Easy Breakfast Casserole
Ingredients
1 pound of sausage, cooked and grease drained
12-14 eggs (depending on the size of the eggs)
¼ to ½ cup of heavy cream
Salt
Pepper
Onion powder (optional, but I find it really adds a depth of flavor) I use about ½ teaspoon.
Any other seasonings/herbs that your family likes
Cheese (optional, my kids actually prefer it without cheese)
Directions
1. Cook the sausage and crumble into small pieces. Drain the grease.
2. Oil the bottom of a 9x13 pan with cooking spray or butter.
3. Layer the sausage on the bottom of the dish.
4. Whisk all the eggs, cream, salt, pepper, and seasonings of choice.
5. Pour the egg mixture over the top of the sausage crumbles.
6. If you like cheese, sprinkle cheese on top. This will settle into the eggs which is actually good because you don’t want burned cheese. Cheese cooked in eggs is simply delicious and creamy…wish my kids like it this way…
7. Bake at 350 degrees Fahrenheit for 20-30 minutes. When the top is browning and the casserole no longer jiggles, take it out of the oven and test with a knife in the center. If the knife comes out clean, the casserole is ready.

That’s it friends! I hope you will give this easy breakfast casserole a try, and if you do, let me know in the comments below!
